Grilled Snapper with Lemon-Herb Marinade over Lump Charcoal

- 2 lbs whole snapper scaled and gutted
- 2 whole lemons sliced
- 1/4 cup olive oil
- 3 cloves garlic minced
- 2 tablespoons fresh parsley chopped
- 1 tablespoon fresh thyme chopped
- Salt and pepper to taste
Prepare the Snapper:
- - Rinse the snapper under cold water and pat dry with paper towels. 
- - Make 3-4 diagonal cuts on each side of the fish, about 1 inch apart. 
Prepare the Marinade:
- - In a bowl, mix olive oil, minced garlic, chopped parsley, chopped thyme, salt, and pepper. 
- - Rub the marinade all over the snapper, including inside the cuts and cavity. 
- - Place lemon slices inside the cavity and over the fish. 
Preheat the Lump Charcoal:
Grilling the Snapper:
- - Place the snapper on the grill grates over the side without direct heat. 
- - Cover the grill and cook for approximately 15-20 minutes per side, depending on the thickness of the fish. The internal temperature should reach 145°F (63°C). 
Serve:
- - Carefully transfer the grilled snapper to a serving platter. 
- - Garnish with additional fresh herbs and lemon slices. 
- - Serve hot and enjoy your delicious grilled snapper!
